Here are a few RV-friendly breakfast recipes for those cozy mornings on the road.

Fall road trip

Quick Chocolate Muffins

You can’t get much simpler than these deliciously decadent and moist muffins! This moist muffin recipe is adapted from a recipe from 1825 Inn Bed and Breakfast in Palmyra, Pennsylvania.


  • 1 box Devil’s Food cake mix
  • 1 can pumpkin
  • 1 cup chocolate chips

Preheat oven to 400F. In an RV, preheating the oven is even more crucial. Mix together the pumpkin and the cake mix. Fold in chocolate chips. Scoop batter into greased muffin tins. Bake for 20 minutes. If desired, rotate the muffin pan at 10 minutes to ensure even baking. 

Note: You may want to do a temperature test of your RV oven, because some can run hot or cool. Some RV users have found that a ceramic pizza stone placed at the bottom of the oven helps regulate temperatures.

Slow Cooker Steel-Cut Oatmeal

A good slow cooker is essential for RV travel, especially in the wintertime. Wake up to a hot, hearty breakfast on your next Alaska adventure.

  • 3/4 cup steel-cut oats
  • 2 cups milk
  • 1 cup water
  • 1/2 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 1 tsp. vanilla
  • A dash of salt
  • A few tablespoons of maple syrup

Combine all ingredients in a medium-sized slow cooker and set on low for 8 hours or overnight. In the morning, stir the oatmeal and add a bit more milk or water to get the desired creamy consistency. Serve with your favorite toppings – banana, nuts, dried cranberries, brown sugar, pear – whatever you like!
